Amontillado sherry, which originated as a Fino, undergoes an additional maturation period without the "flor" layer. This oxidative maturation phase develops a richer color and more robust character. By using hogsheads previously used for this well-aged sherry, the subsequent single malts are brimming with flavors of dark cherry, roasted hazelnut, and caramel sauce. We present The Wood Collection with honesty, with a high ABV of 48%, natural color, and non-chill filtering, allowing each unique spirit to speak for itself.
