A longtime fan of Amontillado sherry, Dr. Bill has always loved its nutty, spicy style. Years ago, he began envisioning a unique and delicious whisky that would marry the distillery's smooth, honey-toned style with the individual flavors of these casks, but such casks are rare and difficult to obtain. Finally, Dr. Bill acquired a few precious Amontillado casks and filled them with a smooth, gentle whisky that had spent eight years in American white oak bourbon barrels. Transferred to the Amontillado casks, he matured for a further four years until he achieved the flavor profile he envisioned. The resulting whisky, finished this way, displays sherry-like hints of cashew, clove, ginger, and dried fruit, encircling Glenmorangie's signature peach, orange, and lemon balm notes. Dr Bill has bottled only the finest of those prized casks for the distillery’s Barrel Select Release, saying, “I’ve always loved the nuttier, spicier flavours of Amontillado – it’s my favourite style of sherry. I’m really excited to be able to combine the sherry flavours of those casks with the signature delicate style of our whisky in this special release.” The whisky has been crafted for The Whisky Club in Australia and is available in very limited quantities exclusively online (UK delivery only) and at the distillery’s Visitor Centre shop in Tain.
