Last year, the challenge was to create a citrus-inspired gin using only botanicals grown in the distillery garden, without using any of the peel. To achieve this, we engaged in extensive discussions and research with one of our gardeners, who personally planted, harvested, and dried the botanicals used in this summer edition. The botanicals used were lemon balm, clover, lemon thyme, pineapple sage, meadowsweet, and elderflower.
