Founded in 1846 by Hector Henderson near Port Askeigg, Islay, Cooila means "Islay Strait" in Gaelic. A clean water supply was one of the reasons for settling here, and water has played a vital role ever since. A waterfall powered the barley elevator and maintained pressure in the fire towers. Today, a new heat exchanger uses seawater to cool the heated process water before returning it to the condenser. For many years, all supplies and casks were transported by sea on small coastal vessels called pibroks. Cooila has been a regular winner of prestigious international competitions since 2002. The Distillers' Edition is the epitome of craftsmanship. Each cask in the series is individually selected and perfectly matched to the characteristics of each single malt distilled here. A two-stage maturation process imparts greater depth of flavor and complexity, a core philosophy of the limited-edition Distillers' Edition, which seeks to preserve the perfection of these already exceptional single malts. The nuances of carefully selected flavours are enhanced in a way not found in regular bottlings, while still retaining the inherent character of this exceptional single malt.
