Amontillado is a dry sherry, darker than Fino but lighter than Oloroso. It's a delicate style, matured under a flor (fermented membrane) before being exposed to air for further oxidation. Aged in Amontillado sherry casks, Kavalan's new make reveals aromas of toasted almonds, hazelnuts, and caramel, with an elegant, long finish.
