Peerless® Toasted Bourbon is aged in two different oak barrels. First, it is aged in standard char level 3 barrels, which develops flavors of caramel, brown sugar, and toffee. The whiskey is then finished in toasted barrels, where it develops complex notes of honey, vanilla, toasted spice, and chocolate. This unique aging method elevates the aromas and flavors to a whole new level. “We hand-select each barrel for the finish,” explains Peerless Chief Taster John Wadell. “We chose medium toast because it produces a whiskey with a richer, warm, sweet, and savory character due to its lower tannins, with a strong barnacle flavor.”
