When we conceived the idea of ​​incorporating oats into bourbon, we immediately thought of the Chocolate Oatmeal Stout we enjoyed during our brewing days. That rich stout, and the "Winter Whiskey" it evolved from, bring the warmth and joy of the season to your palate. Winter Whiskey is a bourbon with a distinctive spice profile from raw and malted oats, supported by the roasted cocoa notes of chocolate malt. This bourbon is unlike anything we've ever made or tasted before, a three-way dialogue between the dry cocoa-like character of chocolate malt, the well-balanced oak, and unique spices distinct from rye (like kasha-style buckwheat or blueberry skin). The finish is brisk, with oat spices hinted at by Belgian cocoa. Despite the cereal and the name, the finish is delicately dry and not at all heavy.
